Why?

Associates must keep their work area clean and hygienic. Displays and counters should often be disinfected, too. Mopping floors and organizing boxes are as much part of the job as taking care of customers.
It is also important to have a system that reduces the risks of reusing rags to clean multiple areas. You can use microfiber towels of different colors for different surfaces and counters or disposable wipes to prevent cross-contamination.
Customers keep an eye out for how well-organized and clean the Deli is, which might weigh in their decision to come back or never do so.
