As presented by Phil Lempert, cross-contamination is one of the main worries in customer's minds when shopping for deli products. But what exactly is it? And how does it occur?
Cross-contamination usually happens when pathogens, such as viruses or listeria (or other bacteria), are transferred from one food or place to another food. It is especially dangerous when it is transferred to ready-to-eat products. This transfer can happen in one of these three ways:
✓Food to food - e.g., By storing raw food with cooked ones in the wrong way.
✓Tool to food - e.g., When re-using the same sponge repeatedly to clean knives and tools in the Deli.
✓Human to food - e.g., When washing your hands poorly or forgetting to do so.
